Last night I had browned a pound of hamburger...that didn't get used...plans changed. So I had that in the fridge. A couple nights ago, I had made a Corn Pudding. Which is on the sweeter side. It has creamed corn, regular canned corn, eggs, milk, flour, sugar, salt and pepper. It's a wonderful dish...but we had some leftover...about a cup.
So I got out my large kettle...and started dumping things in...
...carrots diced up
...celery diced up
...green onion cut up
...the pound of hamburger
...the (about) cup of corn pudding
...1 can of beef broth
...2 cans of water
...4 small potatoes with the skins diced up
...1 can of diced tomatoes with green chilis
...salt and pepper
I put a lid on it...and let it cook for about 2 hours on very low temps. The result was lovely! My hubby added rice to his dish to put a little more depth to it. The kids and I just ate it plain. I was quite impressed by my creation...that was basically a fridge cleaner. But I need a name...what to call it??? Any ideas??
